Zatím co se Standou šplháme po zasněžených vrcholcích Jižních Alp, v Česku vrcholí grilovací sezóna. Je tak na čase oprášit jeden z mých starších, téměř zapomenutých receptů na tohohle fešáka. To vám byl tehdy ale nádherný, sluncem zalitý víkend tady u protinožců. Cestou po objevování krás jižního ostrova jsme zakotvili v kouzelném novozélandském městečku Dunedin. Krásné historické budovy se zde mísí s barevnými graffiti od nadaných umělců, písečnými plážemi a zelenými kopečky s dechberoucím výhledem. A abych nezapomněla – jedná se o studentské město, takže si nejspíš dokážete představit zdejší párty scénu. Celý víkend jsme tak strávili surfováním, trekováním a grilováním.

Nemůžu si pomoct, ale rostlinné náhražky masa nejsou prostě to pravé ořechové, takže většinou stejně skončím u nějaké marinované zeleniny. A lilek je bezesporu tou pravou volbou jak nahradit maso na grilu (když nepočítám houby, ty jsou taky božské!).

Na spojení mojí oblíbené marinády a lilku nedám dopustit a tentokrát jsem ho napěchovala do měkoučké housky, s krátce ogrilovanou zeleninou, svěžím kukuřičným salátkem, bylinkovým hummusem a zauzenou omáčkou chipotle. Byla to taková bašta že jsem spráskala oba dva!

Suroviny

na 2 porce / příprava 20 minut

  • 1 menší lilek
  • oblíbená zelenina na grilování (paprika, chřest, červená cibule, cuketa, žampiony…)
  • olivový olej
  • sůl a pepř

na marinádu

  • 2 lžíce sójové omáčky
  • 2 lžíce olivového oleje
  • 1 lžíce medu
  • 1 lžíce bílého octa
  • ½ lžíce oregana
  • ½ lžíce uzené papriky
  • sůl a pepř

na kukuřicový salát

  • 1 plechovka kukuřice
  • 2 nakládané okurky nakrájené na kostičky + 2 lžíce láku
  • 1 lžíce olivového oleje
  • 1 výhonek jarní cibulky nakrájené na kolečka

na bylinkový hummus

  • základní hummus
  • 3 lžíce pokrájených čerstvých bylinek

na podávání

  • pečivo
  • pečené brambory
  • salát
  • chipotle omáčka
Postup
  1. V uzavíratelné sklenici smícháme všechny ingredience na marinádu, lilek nakrájíme na zhruba 2 centimetry široké plátky, které potřeme připravenou marinádou. Necháme pár minut uležet.
  2. Mezitím si připravíme kukuřicový salát – všechny ingredience smícháme dohromady a dochutíme okurkovým lákem, solí a pepřem.
  3. Dále si připravíme hummus – základní hummus rozmixujeme s čerstvými bylinkami (když nemám po ruce tyčový mixér, nasekám bylinky na co nejjemněji).
  4. Na grilu si z obou stran pozvolna opečeme marinovaný lilek a oblíbenou zeleninou lehce promíchanou s olivovým olejem, solí a pepřem.
  5. Grilovanou zeleninu vrstvíme s ostatními surovinami do hamburgerové housky například v následujícím pořadí – salát, grilovaná zelenina, dresink/omáčka, grilovaný lilek, kukuřičný salát, hummus, omáčka.
  6. Podáváme s pečenými bramborami a vychlazeným lahváčem!
