Summer rolls neboli letní závitky mi vždy budou připomínat Vietnam, kde jsme je do sebe ládovali o sto šest. Standa převážně s krevetama, já s hromadou zeleniny, bylinek a tofu. Do závitků se dá zabalit opravdu úplně všechno včetně vaječné omelety nebo ovoce a to je na nich právě to nejlepší. Stačí nakrájet, co najdete v ledničce na tenké proužky, zabalit do rýžového papíru, doplnit o zajímavou omáčku a vytvoříte si senzační, svěží, chutěmi nabitou svačinu nebo hlavní jídlo.
Co by rozhodně v závitkách nemělo chybět je křupavý salát, hodně zeleniny a čerstvých voňavých bylinek. Pak už je to víceméně na vás.
Osobně mám nejraději závitky s mrkví, okurkou, avokádem, koriandrem, salátem, mátou, naloženým a opečený tofu, nudlemi a mungo klíčky. Vždycky mám velké oči a nandám toho do závitku tolik, že ho stěží zabalím. A přesně takový je můj nejoblíbenější! K tomu jednoduchá sladkokyselá pikantní arašídová omáčka inspirovaná právě Vietnamem a můžeme se se Standou utlouct do posledního závitku.
TIP! Závitky skvěle chutnají i se sladkokyselou omáčkou, omáčkou z manga nebo „obyčejnou“ Srirachou.
Suroviny
U závitků je těžké odhadnout množství surovin, proto pro lepší představu přikládám foto ingrediencí, které jsem nacpala do 20 závitků. Příprava mi většinou zabere 30 – 40 minut, záleží na vašich schopnostech balení a výběru surovin.
na závitky
- zelenina – mrkev, okurka, červené zelí, paprika, ledový salát
- čerstvé bylinky – koriandr, máta (pouze lístky)
- ovoce – mango, avokádo, kiwi, jablko
- naložené a osmažené tofu
- vaječná omeleta
- klíčky
- vermicelli nudle
- rýžový papír
na arašídovou omáčku
- 3 vrchovaté lžíce arašídového másla
- 4 lžíce sójové omáčky
- 2 lžíce limetkové šťávy
- 1 prolisovaný stroužek česneku
- 2 lžíce šťávy ze zázvoru + 1 lžička strouhaného zázvoru
- 2 lžíce sezamového oleje
- 1 lžíce Srirachi
- 4 lžíce kokosového mléka + další na zředění
Postup
- Zeleninu a ovoce si nakrájíme na tenké proužky. Tofu si nakrájíme na plátky, omeletu srolujeme a nakrájíme na centimetrové proužky. Nudle uvaříme doměkka a vložíme do studené vody, aby se nám neslepily.
- Všechny ingredience na omáčku smícháme dohromady. Pokud je příliš hustá, naředíme ji kokosovým mlékem a dochutíme sójovou omáčkou a limetkovou šťávou – omáčka by měla být slanější a dostatečně kyselá, aby dochutila hotové závitky.
- Do mísy si připravíme vodu. Prkýnko vydatně pokropíme vodou, položíme rýžový papír a opět navlhčíme, dokud nám papír nezačne měknout. Vybrané suroviny klademe vždy doprostřed. Začneme balit tak, že přeložíme k nám bližší část papíru přes suroviny a pořádně utahujeme. Jakmile máme vše vtěsnané uvnitř, přiklopíme krajní konce a zamotáme zbytkem papíru.
- Závitky podáváme s arašídovou omáčkou.
TIP! Pokud nemáte po ruce limetku, omáčku lze okyselit i rýžovým octem.
